Homemade Thin Crust Pizza ~ The Healthiest and Tastiest Pizza Ever.  Well I think so at least.

This homemade thin crust pizza recipe actually began (years ago) as an Indian Ayurvedic Paratha bread recipe.  Making this dough became a ritual for me.  The ingredients put into this Paratha bread or thin crust pizza dough are quite special!

Making this homemade thin crust pizza dough is not only healthy, but also creative.  It’s an excellent recipe to make with children, friends, anyone!

Homemade Thin Crust Pizza:

This is what you can anticipate… what a joy to use your hands in the kitchen!  Making your own pizza dough is creative, fun, comforting… especially when you fill it with holistic ingredients.  Let the magic begin.

THE SECRET INGREDIENT for my homemade thin crust pizza dough / or Paratha bread, is….

Heat a saucepan with water. Bring to a simmer.  Soak a small handful of lavender petals until water is luke warm.  Set this aside until you are ready to pour into the flour mixture.


Fennel seeds for thin crust pizza

In a large dry mixing bowl, add small handful of fennel seed, large pinch of anise seed, some whole peppercorns, mustard seed, pinch of sea salt.  Other spices can be substituted, but these are my go to spices and herbs.


Add 3 or 4 large heaping handfuls of of Durum flour (also called Semolina). * Warning, this is a gluten filled flour!  I’ve researched all around to find the best and healthiest Durum flour out there.  Breadtopia seems to be one of the top pics.

Whole foods and other specialty grocery stores sell Bob’s Red Mill.  This brand tends to come out crispier.  You can also go to your local Indian grocer and pick up Durum or Semolina flour.


Mix the flour and spices, then add a Tbsp of e.v.o.o.

NOW you’re ready to add the LAVENDER water!   Gradually add enough to mix well by hand.  This is by far my favorite part about making this pizza dough.  You should be able to kneed the dough and roll it into a smooth ball.


Toss a bit of flour over the dough ball to seal it.  Let it sit at room temp for about an hour.  It can be stored in the refrigerator for a few days.

Ready to make your homemade thin crust pizza???

Pull off a fist size of dough and roll it into a tight ball.  Cover with flour and you can roll it out with a roller or by hand.  Let the kids do this!  They will LOVE it!

Once it’s flat and thin, drizzle a bit of olive oil to cover. Massage into the dough.  Fold into thirds and then again until it’s square shaped.

Roll out with roller or by hand once more.  This layering system adds some texture and air between the layers.  If you’re simply making the Paratha bread recipe, then you’re ready to heat it over the stove on a large flat pan.  This method allows the bread to puff up where there is trapped air between the layers.  The Paratha bread remains soft, especially if adding fresh butter over the top.  It’s ready to serve with yogurt and berries, or a savory Indian dish.  Sometimes I just eat it all by itself. YUM!

Homemade thin crust pizza dough


Place flat dough onto a large pan and heat in oven for about 10 minutes or until lightly browning and hardening.  Oven temp at 350 degrees.

Once the crust is hard, remove from oven and add pizza sauce and toppings:

  • I use pre made Spaghetti sauce
  • Fresh cut Basil and Rosemary
  • Shallots and Garlic
  • Tomatoes
  • Mozzarella


Place back in oven for another 5 to 8 minutes until cheese is melted.  Ready to serve!
